Some general rules i go by:
salt: I mostly use kosher salt to cook and sea salt to finish. Sea salt is very salty and flavorful, so i use it in moderation. Kosher salt is good for nearly everything.
black pepper: always freshly ground
olive oil: always extra virgin
citrus juice: always freshly squeezed
A note about measuring:
I usually don’t measure, unless i’m baking. That’s why you won’t find measurements in many of my recipes. Email me at askcollegefoodie [at] gmail [dot] com if you have any questions about measurements, or just use your common sense, or just improvise. Most importantly, trust your instincts! That’s the first step to becoming a great cook.
A note about images:
I hate taking pictures of food. It ruins the eating/cooking experience for me. Also, my digital camera is a crappy point-and-shoot, which makes all food look ugly. Once i get a DSLR and perhaps a macro lens, i might start posting more food images, but even then, i don’t think i’d be bothered to take photos, especially of food that i cook and am about to eat. However, i will try my best to post pictures where necessary. (FYI, images aren’t necessary in recipes.)

Once a month, i’ll post on a “fundamental” of cooking, whether it be a fundamental skill or rule or philosophy. These posts will naturally be filed under the “fundamentals” category. Keep in mind that i am not an authority in any sense, rather, simply a 20-year-old with a passion for food. I won’t bother to back up my arguments. This is my blog, and this is the way i cook and eat and the way i think and feel about cooking and eating. Simple as that.

nutrition: Granted, i’m not a nutritionist, so this feature will be rather primitive. If you know more about nutrition than i do, please contribute or correct me accordingly in the comments.
dish count: This is the # of things that need to be washed after you cook but before you eat (in other words, everything except the servingware). Will make an effort to include in every recipe.
